Artisanal cheese making: a Josephine heritage on display

The departmental capital of San José is preparing to celebrate the First Artisan Cheese Fair at the Paseo de los Constituyentes, which takes place next Saturday, October 7, from 5:00 pm to 9:00 pm. This activity, called "Quesería artesanal patrimonio josefino" promises to be an interesting experience for cheese lovers. artisan cheese and local gastronomy.

Training in Artisan Cheese Production

On Friday, October 6, the following day, a Training in Artisan Cheese ProductionThis is an opportunity for those interested in delving into the world of artisan cheesemaking. The event, which is completely free of charge, will be held in the facilities of the Departmental Library, located in the city of San José de Mayo. It will address crucial issues for the qualification of a cheese factory, as well as the current regulations on the subject.

The training will include the participation of leading experts, including the agricultural technician Carlos Rodriguezgeneral manager of Environmental Management and Health of the Departmental Government of San JoséFernanda Cerdeña, a member of the management technical team, and Dr. Federico Bonino from Ministry of Livestock, Agriculture and Fisheries. These experts will share their knowledge and provide essential tools for those who wish to start their own artisanal cheese dairies.

In addition to addressing technical aspects, the training will also include valuable information on marketing and public procurement, provided by Jorge Vaz Touren, head of Rurality Department from Ministry of Social Development. This perspective will allow participants to better understand the market and the opportunities to promote their products effectively.
