Tricks to preserve carrots for a longer period of time

The carrot is a highly nutritious food of practically universal use. It is rich in vitamin A, it also provides vitamin C and B6, iron, iodine and potassium. It is a healthy, versatile and delicious option for any diet, and like other vegetables it is important to keep it fresh to get the most out of its flavor and properties.

Its affordable price and availability almost all year round make carrots present in every home. There are a few simple tricks to follow to preserve carrots for a longer period of time.

Humidity

Contrary to other vegetables, carrots keep better in a humid environment. One option is to leave them in a container with water, which should be changed constantly, when we just notice that the liquid begins to become cloudy. They can also be wrapped in damp paper, like the absorbent towels we use in the kitchen.

It is important to emphasize that, in the case of applying any of the above tricks, carrots should be stored without the green leaves that they sometimes have on top, because otherwise we will obtain the opposite effect to the desired one and the carrots will deteriorate faster.

Frozen

Carrots can also be frozen to extend their shelf life. First peel and cut them into pieces (slices or sticks). When you have them all cut, put them in a pot of boiling water and let them cook for only a couple of minutes: they should not be fully cooked. Then put them in a bowl of cold water to stop the cooking process. When they are cool and dry, you can store them in a bag or container with a lid in the freezer. This is one of the ways to keep it longer.

Frozen carrots are not very useful for raw recipes, such as salads, but they are suitable for any dish in which they are cooked, so they will be ideal for soups, rice, stews, among others.
